Monitoring voltage instead of percent

Awhile back I forum member gave the advise that it is better to monitor your batteries voltage instead of percentage during flight. I don't remember the members name or exactly what thread that was. At that time I was more interested in my Mavic arriving than anything else. Now that I'm flying it, I'm wondering how to do that. I found the setting in the GO app to display volts, but how do you know when your battery is getting too low to fly safely? Obviously you can't just run it down to 1 volt before you return to home.
