I'm thinking of getting some binoculars to watch my Mavic from a distance. Anyone doing this and what do you recommend?

I do have a pair of Vivitar PV series binos for other uses. They're great. They might work for your intended purpose.
For watching aircraft, or astronomical objects, I really like these:

to much power no good for hand heldI use these when working the fire towers in Northern California. Great magnification, good lenses. My spotters use them when I fly:
