I’ve been flying for several years, and noticed that Kittyhawk changes the appearance of controlled airspace. Before, the map displayed various sized/colored circles indicating this airspace, now there are these grids that overlay the circles. Does anyone know the purpose of the grids?

That's the FAA facilities map for controlled airspace. Each square has an allowed altitude ceiling. You can't request clearance above said ceiling in LAANC, not even under 107. 107 can ask to go above it manually through DroneZone. Hobbyists cannot get an exception.

The facilities map only has 2 colors: red means LAANC not available for that location, green it is available.

Within the grids in Kittyhawk the darker green indicates that authorizations up to 400 ft are possible, lighter green-300ft, yellow-200ft, orange-100ft, red is 0ft.

Look at this video; at about 2:35 they discuss facility maps and LAANC authorization altitudes in Kittyhawk:
