how can i make my Air move ahead (or any direction) automatically? in other words, like waypoints, but more control... move forward 2mph, ascend 20' per 30seconds, yaw 10 degrees for 30 seconds, etc. perhaps an Excel lookup table that gives perfect instructions by secopnd.

Waypoints will work but your limited to 500 meters away

Litchi can do some of what you're asking

Tap n fly, free form mode for basic straight line. Beyond that litchi as mavic air doesn't have waypoints in go4

You may automate the flight by usibg the Litchi app: Litchi for DJI Mavic / Phantom / Inspire / Spark - Apps on Google Play in a Waypounts mode: Help - Litchi

You can do all of what you're saying including manually setting the pitch, roll, yaw (to an extent) through the DJI SDK.
Do you have coding experience? If so, look into the VirtualSticks classes.
