I just received a Mavic Pro with 3 batteries, all appear to be in great shape, no signs of wear. What is the best way to care for them if I won't be flying for a few weeks. I appreciate the help.
 
Use them as one would normally use them. But make sure before you launch, check the battery/cell voltages, compass and IMU values, BEFORE lift off...
If all is happy, then you should be good to go.
I would set my battery(s) "default discharge cycle" to 3 days (using the DJI Assistant). and then go as you do.
If you are "planning" on not flying for an extended period of time, (due to weather etc.) just charge them and you can auto discharge them about every 5/6 weeks.
That's my model...
 
All 3 cells in all 3 batteries have very even levels when checked, and I have them stored in a 68-70 deg room at about 65% charge, 5 day default discharge cycle.
 
I would also number them and use them in order.
