Just about to test out my Mavic mini in rural areas ie over farmland on outside of my town . Just wondered what sort of distance away I will need from nearest buildings - town ect to get clearest signal. Will I need to be in the middle of nowhere or is a half mile or so good enough to be clear of WiFi interference.

If you have an Android device, you can install a wifi analyzer app that will detect wifi in the area. Unfortunately, no such apps exist for iOS devices because Apple blocks the low level access to the hardware required for them to work. This is one of the better ones:

Just note that it's not only where you with the RC are positioned that counts ... during the flight the drone also can encounter interference that you can't measure with an app in your phone.

Of course. But you can still get an idea of how saturated an area is. And you can always drive around the area you plan to fly first and take readings at various locations. For example, inside my house, I can currently see 12 wifi routers in my neighborhood. Where I normally fly, there are zero wifi signals. And I've walked the whole area. (I don't fly beyond VLOS).

At least then you'll be somewhat prepared.
