It all depends on what you want from your final product. If you're just shooting for instagram then no...not much reason to use DLog. But if you're shooting 4K to create a nice video then in many instances it's a huge help particularly if you have cloud, snow or deep shadows that you want to "save".
In the DJI Fly app there is a setting to enable. I can't recall the exact name. When you enable that setting you will have both srt and lrf files included on your sd card.

I think you misunderstand that video. I'm not sure why he got the 'connection' screen but after that he chose his mini 4 pro (or whatever) and connected it. The screen that follows that time stamp is one you would only see if you had the drone connected. Problem solved as far as I can see...

OK....if you're following all the guidelines it may be time for a call to DJI for clarification if there is something off with your setup. Hopefully somebody else here will chime in with something more helpful.
Agreed with all of the above. You are really asking for more than you can expect to get. Following the above recommendations try 8 or so exposures of the same thing to see if you can get one good one. You couldn't even hold a camera in your hands for an 8 sec exposure and expect it to be sharp....
You say drone offline. What does that mean. If the drone not turned on and connected to the controller? Also not sure why you'd need to choose Connection Guide if everything is turned on. Ensure your drone is on and connected and it's all ready to fly.
