I wonder if the recordings we are seeing are just screen recordings instead of actual video recordings? That would have a really negative impact on my purchasing decision. I have a feeling that if this is actually the case, that we will be hearing a lot of disappointment.

Because the camera/ gimbal behaves differently in FPV mode. The drone will "fly" the same way but the camera and gimbal wont be in "follow" mode.

Agreed, however there were no actual flights. They were all tethered to the ground. The only "flights" there were were the tethered rides.
