You are experiencing what I find with the Hassleblad camera when filming the sea, in that the whites are always over-exposed. It is necessary to adjust the exposure be -0.7 (or more) but then the rest of the image becomes too dark. For stills over water where there is white I sometimes even need to go as far as -1.3 and then use photoshop to lighten the non-bright areas.
