Art, D-Log Vs Normal

Does every one shoot in the very flat profiles and colour grade? I am New to the Mavic, but I have never done this with other video cameras.

Or do most shoot normal with tweaks?

I use ART on the Mavic, DLog when I film with my Sony A6500 and color grade in FCPX. If you don't have the ART Profile and you want it, the easiest route would be to purchase Litchi and get it. DLog is kinda crappy (in my opinion) on the Mavic so I would chose another Profile and tweak the custom settings to something like -1 -1 -1.
