Depends on the project. I will use whatever is best for the situation and if other cameras are involved.
If you dont want to spend a lot of time editing, use Normal and properly set your White Balance and go. Then, you will have passable color and you will save time if doing color correction and color grading isnt something you are interested in.
Most of the time I will use one of the D profiles (D-Log, D-Cinelike or Art) as I will be adding to footage from another camera shooting in LOG format. Makes it easier on the editor.
