Second the suggestions to bracket your exposure and post-process. Ansel Adams said that the negative is the score, the print is the performance, and that's very much true.

I do a lot of 360° panoramas, which means that I'm almost always exceeding the dynamic range of the camera, so I've got very used to shooting three exposures (2 stops apart, so 6 extra stops of dynamic range) and exposure blending. I'm still not very good at it, but I'm gradually learning. This image was shot that way:


There are lots of good tutorials on Youtube about getting the most from a photograph, often Lightroom-specific but the techniques also work in other software. Unfortunately there's also lots of crappy ones out there.

If you look at the histogram and the reds, greens, and blues are separated then you have the chance to really bring out colours in the image. Look up HSL editing for some techniques.
