I had that exact problem a couple of years ago with my mavic mini. I contributed to updating the firmware, but the go fly app on the phone was a little behind. I updated the phone app and it solved my problem.
I use Kdenlive. It's opensource and free, runs both on Linux, Apple and Windows machines. When you first open it, it might look overwhelming, but a quick watch of some YouTube videos will show you what you would like to do.

There's been times when I couldn't find the video I thought I took. It ended up being I started the recording, but hit the photo button before stopping the recording and it takes the photo and cancels the video save. That is on a Mini 1, I don't know if this is an issue with other models.

I think you summed up my thoughts exactly. Unless I'm on this forum in the section about videos, video clips aren't really my thing and takes up unnecessary bandwidth.

Try kdenlive. It's open source, free, and I've run it on dated hardware with the worst problem getting stuttering audio during editing (final audio comes out fine)
Here's a test I did with some footage I had from around my house with my Mavic Mini. I used Kdenlive for the video editing. It was pretty easy after I watched someone else do it on YouTube.
I've done it post processing on some still shots. Mask the lower foreground areas and then apply a Gaussian blur to the out of focus areas. I'll have to look and see if thereis a feature to do it in my video editor.
