This is exactly what I ended up doing. Found a good sale on an 11" M2 2TB iPad Pro and it has worked perfectly for this purpose. Bonus: no issues with 6K All-I playback.

The current Pro is 40Gbps USB4 / TB3; the Air and most recent Mini are 10Gbps USB3. If the Internal Storage can be seen in the iPad Files app, offloading at 700-800MB/s should be possible.
