    I use VLM often and have my own Google Elevation API key. The VLM elevation profile is empty for me whether I am using my own key or using the shared key. I don't think I've seen that work in years.

    Extremely bad advice! To encourage someone else's child to risk falling out of a tree and breaking a bone or worse is very careless. You want to risk someone's safety, climb the tree yourself!

    For iOS apps, you do not go to the "DJI center". Instead, you open the iOS App Store and search for "DJI Fly". Then install the app.

    Horizon issues

    You may be misunderstanding what FPV mode is. When turned on, even though the drone may remain level, the camera is tilted to simulate a turn in a fixed wing aircraft. What you described in your first post is exactly what FPV mode does.
