You cannot set camera and video settings on phone, they are over ridden once the goggles connect and must be set on goggles as well.
In particular, goggles can downgrade video recording quality depending on how you set the video feed to eyes.
SF has many restricted areas. Use UAV forecast app and enable all airports including class D helipads.
The coast south of san francisco is much easier to find legal flying areas.
If you absolutely want to play with mavic indoors, here are some things to do without flying:
1. practice taking manual manual mode photos, long exposure hdr shots, and getting complete control of the device as a camera. Because auto is just...bad.

Not sure what it will do to sonar sensors or cameras, but it is better than salt water corrosion for sure.
When sensors are off, it does not hoover as accurately. So yes, you have to watch everything when flying over water.
What I have not seen, is somebody with sensors off, and the vehicle tries to auto land in water.
