The thin plant stems and leaves in the video don't suggest any significant wind. And, besides, the drone is capable of holding its lateral position with substantially greater winds. Loss of visual positioning on the table surface seems like the more plausible explanation.
Max speed, yaw rate, rate of gimbal tilt and other parameters are separately adjustable for each of the three flight modes. Have a look at the manual. It sounds like the settings have been tinkered with.

I can see how the Rescue Jacket makes operation from water possible, but I don't understand some of the other things.
How does the it influence the control logic of the motors and the down-looking sensors to allow the drone to hover at lower altitude without triggering auto-landing? Or not...
If the drone is inclined relative to the bottoms of the foam blocks, it would reduce the angle from horizontal facing one way and increase the angle facing the other way.
