I agree. Used Agisoft Metashape to stitch thousands of UAV images of irrigation channels for a research project. No mis-shapen objects just clean sharp ortho-photo-mosaic images. Perfect for your task , if flown in a grid pattern as above.

Also, when using a MAC tablet out in the open during summer at 35+ Deg C the tablet would shut down until it was placed in an air-conditioned vehicle with loss of contact with the drone until re-booted. Would only work continuously in an a/c vehicle so VLOS was limited.

Works fine on a Linux Ubuntu 22.04 PC here is Brisbane! Great photography and we are so blessed to live here in Queensland where nobody cares less about being flown over by a UAV (Drone)!
Err...ummm I really would consider AGAINST flying in China. Why? An Australian journalist has just been released from 3 years in jail for releasing a government embargoed news article 5 minutes before the embargo was lifted. You really want to fly an UAV in that environment? I would not.
