Your TV may by default have a lot of processing turned on that you have never turned off,it is having the "un-natural" effect of making the image appear sharp and smooth,in reality that is not how we see though :) Really you should have some motion blur,it's not natural not to have any at all...

I record in MP4 but either would work okay. There is no major difference,MOV is basically Apples version (branding if you like) of MP4.
