You might want to try darker clothing on a snow background for follow me mode. I think even VPS is also blind with all white background. Did it automatically put the subject in a box or you have to manually draw a box on the subject?
Apps like litchi needs to transmit commands to the AC through the RC. If it can do that without the controller then you are good to go. Mission stored on the AC is not going to start on its on without the RC. Even if you can fly a mission without RC, why would you even want to.
Always hand catch above head level. You have left stick control and zero control on right stick. No control on horizontal movements. Better be safe than sorry. Turning off motors by tilting AC 90 degrees is not really a good idea. The AC will compensate and resist before shutting off...

My concern when flying over water at below 10 meters is its ability to maintain altitude hold. My P4P has a tendency to dip in altitude over water on low altitude during hovering.
I think its camera cable ribbon. It is the exposed wire from camera to gimble. It is different on the mavic 2. It is more like a flat ribbon instead of wire strand.

Try recording and see if camera is working. Eliminate problem on AC side. If its working then problem could be with mobile device and DJI GO4 app. Try on different device. Try also a different cable between RC and mobile device.
I think it only gives you battery estimates based on the AC connected. I dont get the idea of waypoints needing multiple batteries unless waypoints are arranged in a circle and the RC is in the middle.
