Look for the "Expo" item. Click to expand to the parameters you mention. You can set each of the 3 modes to different settings for those parameters

I used the master shots today for the first time in forever and there was a roll one that definitely wasn’t there last time I did it!

Like this? What curve? Use a tele lens rather than a wideangle and you can do it simply from one position and rotating the camera.
