Is it possible to edit the EXIF data fields to include copyrights and author information?

I cant find anything about this, so if someone out there has the expertise - could you share how its done?

Yes

Just look for EXIFTOOL (link) There are a lot of informations, how to use the tool. It's a very powerful tool - Take your time to understand the syntax and you can manipulate all EXIF, XMP and IPTC data in an image.
