What filter should I use to film over the desert on a nice sunny day? Over water and during snow season?

You should use whichever Neutral Density filter allows you to get shutter speed to double frame rate, which produces the smoothest footage. In bright sunlight that might typically be an ND16 or ND32.

Some people use circular polarizers to reduce the reflection on bodies of water, but personally I'm not convinced that looks better, so stick to NDs myself.

For snow or sunsets, you may also want to try graduated filters - it makes the sky darker, but lets light through on the ground.
