I just think it's all about the workflow. I mean, if you've got a lot of footage, clips, photos, etc. you're still going to need external or additional storage, and no matter how you shake it...dealing with that on any iOS device is what I'd call wonky at best. Also, to my knowledge, there is still no way to deal with lens distortion in iOS yet (does anyone know of something that works on videos yet there? Threre's plenty for photos...), and I'm sure that there are plenty of other semi-advanced functions not available yet in any iOS app. I'm not saying that the iPad Pro workflow might not rock for some (I think it might even be good enough for me), but what I am saying is that once you start getting into the 2k+ pricing structure, many people's needs might not be fully met by what it is capable of delivering yet...no matter the speed.
