Whats the best way to adjust contrast in Mavic Pro....
Sometimes the sky seems to be washed out...
Whats the best settings and what does everyone else have?

Like any other photography you have choices to make as to what is properly exposed. Handheld cameras can use a graduated ND filter to help overcome this issue, but with a drone it would be difficult to keep it positioned properly with the horizon.

For still images try shooting in HDR (High Dynamic Range) mode. This is supposed to lower the exposure of highlights so they are not entirely white and increase exposure for shadow/dark areas to preserve detail. If the lighting range is only slightly expanded this works fairly well. If there is a long tonal range between highlights and shadows, a series of under exposures and over exposures can be combined in post processing to compress the image tones to show detail across the range.

For video you should expose to show details in highlights. This is because the eye is drawn to the brightest areas and will distract from the subject of interest. Having said this, video is often more difficult to control as you need to keep a 1:2 ratio between frames per second (typically 24 or 30 FPS) and ISO. For example, 30 FPS should have an ISO of 60. This ratio often requires use of ND or neutral density filters in bright sunlight in order to reduce the ISO.
