The killing floor was situated at ground level, the refrigeration units occupied the top floor, and the offal handling facilities were located on the lower level. This layout ensured that the entire process, from slaughtering to refrigeration and waste management, was streamlined and well-organized.

The Nimmitabel Meat Works specialized in the butchering of cattle, sheep, and pigs.

At its peak, the meat works provided employment to up to ninety people, making it a significant contributor to the local economy.

There were rumours that competing meat works paid certain union members to incite trouble, adding to the facility's woes. Additionally, there were suspicions of imprudent stock purchases and the possibility of price manipulation.
