Do I need to put all updates on the drone when it says there ready for download

No.
Read up comments about them, any reported problems with a given update and whether or not they offer some additional feature you want or need.
Also check whether it is said that you can revert to an earlier version if you find you do not like the update

I say "Yes" personally because I prefer to have the latest features and firmware on my Air 2S, controller, batteries and the Fly App. I've read that some pilots do stay current and some don't it's your choice.
