Considering purchasing used

#1 Is there a way to confirm how much a Mavic Pro has been flown?

#2 Does the serial number have a mfg. date code in it?

#3, Anything else to consider?

  1. You can see how many charge cycles the batteries have and then estimate flying time. You should check the batteries anyway for their health and use.
  2. There are a few threads on this topic but since the date is not related to the use it is of limited value.
  3. a) There may be water damage that is not apparent on the outside that could shorten the life of the electronics inside. b) Check the charging port on the RC. It is rather delicate. c) Fly before buying if you can. Some problems don't show up until a few minutes of flying. This will also show the strength of the RC battery and give time for any overheating problems to become apparent. If you can't fly it, ask for a verification video similar to the one DJI requires for a Refresh purchase after 48 hours.

If you are purchasing it from an individual you could ask to see his flight logs; that should give you an idea of how much it has been flown.
