Basic procedure: You take a series of images while hovering in place. For example, 12 images with gimbal up, 8 images with gimbal half-down, and a couple with gimbal almost all the way down. You then feed those still images into a panorama stitching program, such as PTGui (paid) or Hugin (free) or whatever Microsoft calls their thing.
