Make sure the screen brightness is on max, then perhaps, stand in the shade ... turn away from the sun ... buy some anti reflective film for the screen ... wear a large hat ? ... wear a dark sweater/jacket or try to find or DIY some kind of sun screen for the phone.

Welcome to the forum, out of curiosity what model iphone do you have, as I know some are better than others with handling glare, you could get an anti glare screen protector, or buy a dedicated sun shade, or make one out of an Amazon box ;).

I've flown with a mini4 and found a four sided hood seems to work best at keeping the light out from all the sides.
