I have a spare iPhone that would love to use only for the remote to fly my drone.

Does my iPhone need a active sim card and I can use my phone in the remote without?

The reason I ask is simple.

1) I rather use my spare iPhone because nothing else will run on it but the DJI go app.

2) I rather use that phone than an active
Phone. Can you imagine flying and getting a call while your drone is 600 feet up?

You can use it without a SIM card. You could turn it to airplane mode to kill calls and notifications.
 
You don't need GPS on your device to fly. People with non-cellular iPads do it all the time. Cache your maps at home on wifi for the area you plan to fly. Be sure the Go app setting is ticked off.

Open the map view in the app and pan around the area you plan to fly, I always zoom in and pan (I use an iPad with no cellular service sometimes).

FYI - The drone has it's own built in GPS/GLONASS so no worries there.
