I might be wrong, but it looks like the infamous "jello effect" which is usually caused by vibrations in the drone causing a strobe effect with the video frame rate. If the vibration is caused by faulty props (or imbalanced props), an easy fix is to replace all 4 props with brand new ones...
Your "Expo" settings have probably gotten changed. In main DJI Fly screen, tap the three dots in the upper right corner, then select Control, then select Gain & Expo Tuning, and adjust all three flight modes to your liking. Hope that helps!
I agree with @MS Coast. 3 miles is not an exaggerated claim, because that assumes nighttime flying. It's normal to get less than 3 miles of visibility in twilight, and even less in daylight.

Another option is AutoStitch, which is perhaps the easiest to use because it doesn't require setting a zillion controls and options. Just load photos into it (in any order!), and it does the rest. And it's free. Available here: AutoStitch
