I switched off the vision sensors and strapped a Galaxy S7 with the Flir One camera to the bottom for a quick test. Worked okay. There wasn't too much wind the day I tried. I think a Raspberry Pi with attached Flir may be a better idea, though I haven't got round to trying it yet.

I have that mount also but it won't work due to the battery on the crystalsky. I just use velcro stuck on the back of the monitor and on the fold out arms. Works a treat.

I work on a ship and had the same idea as yourself in blocking GPS to allow easy takeoff and landing. With the most recent firmware the Mavic automatically assumes that I'm in a NFZ. I downgraded to .400 and it'll work but the whole ATTI thing on a moving large ship with various winds coming...
