I use the PGY tech propeller holders. You kind of need to put the aircraft on its back to remove the bottom/rear propeller holder and you can clearly see the global guard while on its back?

I think you could do it with 2 people. 1 flying and 1 catching. It will have to be plucked out of the air. I do not believe there is any way to have it match or hover the speed the vessel is traveling at. Once caught just flip it upside down and it will shut down on its own? My thoughts anyway...
I gave up riding last year due to injuries but having ridden probably a half a million miles in 40 years between the rubber handlebar isolators and rubber mounted (or counterbalanced) engines it is not an issue. Many people ride with their phones in a mount without issues.

Only suggestion I have is maybe use a phone holder on your handlebars with a cable long enough to go from saddlebag to phone. That way you don't have to keep checking over your shoulder if the drone is still tracking. Might be safer?
I have ridden 40 years and it only take a second or two.
