All:

I'd like to track a vehicle driving up switchbacks. I want to film from the side and cant figure out how to keep a drone on the same side as the vehicle changes direction. Has anyone figured this out?

Using waypoints might be possible but then is there a way for waypoint missions to also follow a subject!?

You could try Profile mode but I do not know how it handles elevation change. Perhaps you could control the elevation while the Mavic handles the tracking.

I do not think Waypoints will work for this or at least it would be very difficult if not impossible to set up.

However you do it, watch out for obstacles and be ready to cancel the flight. Obstacle avoidance will be useless.

Use ‘Focus Mode’ in Autopilot.
If you are within the car you’d like to follow, then simple use ‘follow leader’ and that’s it. To use all the capabilities Autopilot offers, you must use an IOS device with builtin barometer to handle altitude changes.
