That feature is available on the Mavic 3s. I've found limited use for it.

And the A2S. And to a very limited degree on some others, but the range is small.

Try press and hold on the video feed,then slide your finger up/down, this should control the gimbal vertical. If your drone supports horizontal control, sliding left/right will yaw the gimbal, a little or a lot, depending on the drone model.
