Specifically speaking, if I buy a phantom 3 as an extra drone could I just buy the drone and use the mavic controller when I wanted to use that one?

No, Mavic uses DJI’s OcuSync technology, where as the Phantom 3 Pro/Adv uses Lightbridge technology.
