The EV value has a huge effect on picture quality.

As in....reduce exposure and bring it back afterwards in post? Or have you got another secret?

Yes. EV -.03 or -0.7 then decrease shadows in post.

Yes I've typically used ACDSee for photos and I do the same, then drag the highlights right down and pull out the shadows. A simple thing that makes a huge difference.
