0 to -90? I know the gimbal physically can go negative or pointing up. Where in the DJI FLY app can I change the limits?

Why, up angle removes the "hole" in the top of a panorama

I don't have an Air2s, but try this:
tap the 3 dots menu in the upper right of the main live view screen in the app and then... > Control tab >Advanced gimbal settings > Allow upward gimbal rotation

If you are using IOs, there is a known bug in the Fly app. The upward gimbal movement switch is missing.

so what is the solution for iOS users to enable the Allow Upward Gimbal Rotation? To use an ANDROID phone to enable it and then use the iOS phone?

I have not tried, but it could work.
