ive just recently started using side to side motion whilst filming.

is a slight tilting of the horizon normal for Mavic pro, especially at full stick?
sometimes i find i have to slide the other direction to get it flat again.

Unfortunately, yes, the gimbal roll sloshes a bit. You can adjust the roll bias to make it level once, but that doesn't change the extra sloshing and slow leveling you're describing. There are a couple settings that adjust this but I haven't hit the perfect combination to eliminate it. It may just be a limitation in the responsiveness of the IMU for roll.

given the range of the gimbal tilt or "roll" it seemed reasonable for it to do it
i went through the IMU process again just to make sure its as good as will get
i imagine higher end models like the inspire rotate the whole lens to compensate for this

The slight gimbal or lens rotation on the X axis, seen when doing a gimbal calibration.

there is no sideways gimbal control only the y axis, so

Is this small x axis range used automaticly when changing direction in 'follow', or 'yaw follow' modes?
