I need a LAANC for a location that I plan to fly (I am part 107) but I am unsure of what time during the day I will be at the location. Sometime between say 10:30AM and 3PM and I will be there for an hour. There is a 100' ceiling for the LAANC there. Is it reasonable to just book that entire time block? Is there any limitation on that? Additionally, I know you can request to go above the specified ceiling but I fear if set it to 200' and it's specified as 100' they will poo poo it though I have heard you can request to go above the specified ceiling.

Can anyone shed any details on this?

Why not just try a request for the full time period and see what happens? You can cancel the authorization if it goes through. Normal LAANC requests happen essentially instantaneously on an automated system.

A request to exceed the ceiling limit has to be submitted through DroneZone and requires a human review with a multi-day delay.

Yeah it's quite normal to block off a large time range, you can do the entire day if you wish. If you look at the request before submitting, it usually says something like for example: "Auto approval available up to 300 ft. Further coordination available up to 400 ft" which tells me it is at least available. You don't have to cancel an authorization, just don't fly and it will auto expire eventually.
 
One last question - will the Fly app cry about the airspace and geofence me out? Do I need to file something with DJI under my account to get them to not do that or will it just warn me?

As long as all your software is up to date, you should have any problems with DJI and any type of geofencing.
