Just wondering would shooting in 4k and downscaling to 1080 do anything to improve video quality , not that I'm that disappointed with this footage.

Shooting in 4K and downressing will give some slight improvement. It well not be visible, depending on your viewing conditions. You could probably make more improvements using color correction. Your exposure is pretty good, but you might be able to improve it slightly by brightening the overall image slightly, and raising the black levels a bit. Using either a waveform display or a histogram will help.
