All manual settings, RAW and the histogram are your friends. Keep the histogram’s “wave” forms from going off of the right side of the graph.
For stills, you can always recover the detail in under exposed portions of RAW images. You cannot recover much, if any, detail from over exposed portions.
As our Swedish compadre mentioned above, AEB bracketing (5 frames for me) is an excellent idea as well.
With video, I am not sure about recovering detail from over/under exposure. I believe shooting in D-LOG will give you more flexibility, but I don’t have the patience for the color correction needed with D-LOG.
