Problems adjusting safety settings on my new mini se

When I try to alter safety settings such as RTH altitude, the slider bar goes to my new height but then snaps back to original number.
How do I lock it in?

Is/was the drone connected to the controller and phone at the time? From memory the drone must be connected for some settings to stick.

Because those settings are stored in the drone, you can only change them while connected to the drone.
