Where are settings stored. Are they stored on the Mavic or the app? If I change from a iPhone to a iPad will the settings remain the same?

Most of the settings are stored on your Mavic, so they will not change as you switch devices. The handful of settings that are stored on the mobile device will have to be set on each mobile device.
