Too hot, too many mosquitoes...
Can I just sit in my car with AC on, facing the drone and fly it safely?
Any downside? Signal loss?

No problems as long as you have a clear, unobstructed line of sight between the controller antennas and the drone.
 
Hard to maintain a clear line of sight.
Lots of metalwork to screw up the controller compass (so radar display maybe inaccurate).
If you're got a heated windscreen chances are it'll block signal.

Not hard at all if you're facing where the bird is. I've gone easily 1500-2000' away no problem. Mosquitos are one thing. I fly when it's 20 below, with the engine running...Sweet. OP, Practice some and you'll find its limitations.

I've flown while sitting in the car and it works but it was limited (I'm in CE region so signal strength is lower per se.)
It is one thing to hold the RC above the dash so the windshield is the only obstacle but that is uncomfortable.
Having the RC in the lap while sitting is a different signal quality.

No problem... I have done it several times when I didn't feel like standing in the sun.
