It's not your eyes, I've noticed the same thing too. The gimbal level seems to look way off on a lot of videos.

I wonder if the horizon can be calibrated level using the calibration capabilities of the Remote/Aircraft systems.

You can calibrate and adjust, and it still wanders off. Frustrating to say the least.
