What’s the difference between EXP and Sensitivity settings?

Expo controls how sensitive the controls are in the first half way between stick center and full stick. A smaller expo number means the first half way between stick center and full stick is less sensitive and the second half way to full stick is more sensitive. .5 means the first half and the second half are the same sensitivity. Values higher than .5 mean the first half is more sensitive and the second half is less sensitive. Expo will not change for the drone reacts at center stick or full stick.

Sensitivity on the other hand controls how quickly the drone reacts to full stick input or releasing the sticks back to stick center. This is related to expo but is not the same thing.Some sensitivity settings are more subtle than others.

Brake sensitivity controls how quickly the drone comes to a stop after releasing the sticks.

Attitude sensitivity is subtle but is how quickly the drone responds to a stick input. A lower value lends itself to a smoother flight but too low and and the drone might seem sluggish and not very responsive. A higher value lends itself to a stiffer control experience a more ability to make precise movements. If you feel the drone controls are a bit jerky you can lower this value to get some relief but it’s very subtle. Basically low values are like the steering on a Cadillac and high values is like steering on a sports car. It’s very subtle, however.

Yaw sensitivity is how quickly the aircraft will rotate at full stick input in degrees per second.
 
Another way to look at this is that the sensitivity determines the relationship between the stick output and the aircraft response, and the exp value determines the linearity of the stick output as a function of stick position.
 
As a newbie to drone flying (Multirotors) but a very experienced plank and Heli flyer, be very careful with expo as it can bite you in the bum...
I have found that as "sar104" has mentioned the sensitivity options are the ones to play with.
