In regard to the data that gets recorded, between the Sim card in the drone; vs. the data collected with the Sim card in the RC2 controller?

You don't need a card in the controller for flying.
The only data recorded to the SD card in the drone is still images and video.
The app receives flight data from the drone and records that in the controller's internal memory.
 
The difference is mainly that one in the craft is final quality, and the other is low-res cached version.
Very useful to have that if the UAV goes down and powers down for some reason. You can at least review the footage then to try and find it.

Note that BOTH these types of video are separate from the screen recording of the controller you can initiate by swiping down twice and starting it manually. THAT recording shows all the UI as well, and is also stored on the remote, either internally, or directly to an SD card you have inserted.
