I just printed a 120cm*60cm print on canvas and it looks pretty good from 2 meters away.

You’ve got shoot in RAW and manual. The color settings don’t matter for photos in RAW. You can bring out a lot of detail in post. Also make sure you’re not over exposing the image so you don’t loose any detail. Editing in Lightroom or Photoshop is key. You can bring the color and contrast out...

The airport covers a large portion of Taipa so you have to be outside the zone. As long as you are there’s no restrictions. Just use common sense.
